Saffron-Infused Rosemary Lamb Rack: A Culinary Delight

Saffron & Rosemary Lamb Rack

Ingredients:

  • 2 tbsp Saffron-Infused Rosemary Lamb Rub
  • 2 racks of lamb (about 8 ribs per rack), French-trimmed
  • Your choice of cooking oil
  • Salt and pepper, to taste
  • Fresh rosemary sprigs
  • 4 cloves of garlic, smashed

Method:

  1. Preheat your oven to 200°C.
  2. Apply a thin, even layer of the Saffron-Infused Rosemary Lamb Rub over the racks. Feel free to add more for enhanced flavour.
  3. In a hot pan with a dash of oil, sear the lamb racks until all sides are evenly browned.
  4. Arrange the lamb on a baking tray, preferably elevated on a rack.
  5. Place a clove of garlic in each corner of the tray.
  6. Bake for approximately 20 minutes for a medium-rare finish, or 30 minutes for medium.
  7. Serve the lamb on a bed of fresh rosemary. Pair it with roast potatoes or a light salad for a complete meal.
