Creamy Saffron Rice with Roasted Almonds and Cranberries

Saffron Rice Ingredients:

  • 1 cup of basmati rice
  • 2 cups of vegetable broth
  • 1/4 teaspoon of saffron threads
  • 2 tablespoons of butter
  • 1/4 cup of slivered almonds, toasted
  • 1/4 cup of dried cranberries
  • 1 tablespoon of fresh parsley, chopped (optional, for garnish)
  • Salt and pepper to taste

Saffron Rice Cooking Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. In a small bowl, steep the saffron threads in 2 tablespoons of Luke warm water for about 10 minutes, allowing the vibrant color and aroma to infuse.
  3. In a medium-sized pot, melt the butter over medium heat. Add the rinsed rice and sauté for a couple of minutes until the grains are well-coated with butter.
  4. Pour in the vegetable broth and the saffron mixture, stirring gently to combine. Season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld together.
  7. Fluff the rice with a fork and gently fold in the toasted slivered almonds and dried cranberries.
  8. Transfer the saffron rice to a serving dish and garnish with fresh parsley, if desired.
  9. Serve the creamy saffron rice as a delicious and aromatic side dish alongside your favorite main course.
