Saffron Infused Omelette

Alex's "Luxury" Omelette Recipe.

Omelettes are mans best friend, you can basically do whatever you want to them, and they still taste wonderful, "most of the time" ;).
Long before I married an excellent cook, I used to make omelettes on a regular bases, and I think most guys do because they are so easy to make.
Here is my all-time favourite Omlete recipe and my way of making even the humble omelette sound, taste & smell luxurious. (Recipe by Alex Zar)

Saffron Omelette

Ingredients:

Two large organic eggs
20 drops of Liquid Saffron
20-50mg of whole Saffron (size of a bean)
1/6 cup capsicum chopped up (2 tablespoons)
1 Med tomato chopped
Salt and black pepper (to your taste)
1 Tablespoon butter or any other oil that you like
I'm going to use the oil from 2 rashes of organic bacon for this recipe

Directions:

Beat up the eggs in a bowl
Add salt & black pepper
Add 20 drops of liquid Saffron
Add 20mg of whole Saffron
Warm up a small pan on medium heat
Add butter and let it melt (or you can cook your bacon here and once you remove the bacon from the pan, use the oil left in the pan)
Add capsicum and cook for a minute
Add tomatoes and cook for another minute or two
if the vegetables are cooked to your satisfaction then,
Add the egg mix & let it cook on one side, approximately 2 minutes
then flip it over, like the chefs do or use a spatula to turn it upside down and cook for another 45-60 seconds. ( if you like your eggs well done then ).
Serve on a toast.
