Along with parsley, thyme is one of those herbs that goes with just about anything. The cornerstone of many savoury herb blends, thyme is also increasingly used in sweet dishes and desserts, such as ice cream, panna cottas, lemon cookies and cakes and shortbreads, to name just a few!
In savoury dishes, it makes up a key component of bouquet garni and herbes de Provence, used to infuse flavour into a number of classic French soups, stews and sauces. It is not only great with meat, but works beautifully with veggies (especially sweeter ones, such as carrots and squashes) and with egg and cheese dishes too.
