Known as Haldi in Indian cooking, turmeric is what gives so many curries (and hands) that distinct yellow colour. Yes, it stains, so do take care, but turmeric is irreplaceable when it comes to adding a taste of India to so many dishes.
Turmeric works particularly well with black pepper (the pepper helps bring out it’s taste) and in coconut-based dishes, both sweet and savoury. It is also added to many rice pilaf’s, to bring their distinctive yellow hue. Turmeric may also have health benefits, including reducing inflammation and as an antioxidant.
