What Is Doro Wat?

Ethiopian doro wat with chicken and boiled eggs in a rich, spicy red sauce.

Doro Wat is an Ethiopian-style chicken stew built around a rich, deeply seasoned sauce.

In this version, onion, tomato paste, garlic and ginger are slowly cooked with Berbere and saffron before the chicken is added and simmered until tender.

Hard-boiled eggs are added toward the end, and the finished stew can be served with rice or flatbread.

Why You'll Love This Doro Wat

This chicken stew develops plenty of flavour through slow cooking rather than a complicated preparation.

Berbere brings warmth and spice, while saffron adds another aromatic element. Tomato paste creates a rich base, and garlic and ginger round out the seasoning.

The recipe also makes 4 servings, making it a great option for a family meal or sharing.

preparing the ingredients for Doro Wat Chicken Stew with Berbere & Saffron

Finely chop the onion and garlic, then prepare ½ teaspoon ground ginger.

Cut the 4 boneless chicken breasts into evenly sized cubes.

Step 2 – Cook the Onion & Tomato

Melt ½ cup (about 115 g) butter in a large skillet over medium-low heat.

Add the onion and cook for 5–6 minutes, stirring regularly, until translucent.

Add ½ cup (120 ml) water and the tomato paste. Mix well and cook for another 2 minutes.

Step 3 – Add the Berbere & Saffron

saffron powder

Add the remaining ½ cup (about 110 g) butter, generic Berbere seasoning, Saffronice Saffron Powder, garlic and ground ginger.

Reduce the heat to low and cook for 20–30 minutes, stirring occasionally, until the mixture develops a thick, paste-like consistency.

Step 4 – Add the Chicken & Simmer

Pour in the remaining 2 cups (480 ml) water and add the chicken cubes.

Mix well, cover and simmer for approximately 45 minutes, or until the chicken is cooked through and the mixture develops a rich sauce-like consistency.

Step 5 – Add the Eggs & Serve

serving the Doro Wat Chicken StewWhile the chicken cooks, hard-boil the 4 eggs, then peel them.

Taste the stew and add Saffronice Natural Sea Salt if needed.

Add the hard-boiled eggs and continue cooking briefly until the sauce has reduced slightly.

Serve warm with rice or flatbread.

Why Slow Cooking Matters

This isn't a stew that needs to be rushed.

After adding the Berbere, saffron, garlic and ginger, the mixture cooks over low heat for 20–30 minutes until it develops a thick consistency.

The chicken is then added with the remaining water and simmered for approximately 45 minutes.

This gradual cooking process is an important part of developing the sauce.

Expert Tips

A few simple tips can help you get tender chicken and a thick, flavourful Doro Wat sauce.

  • Keep the heat low. The spice and tomato mixture needs time to cook without burning.
  • Stir the onions regularly. This helps them soften evenly during the first stage of cooking.
  • Cut the chicken evenly. Similar-sized pieces will cook at approximately the same rate.
  • Don't rush the spice mixture. Give it the full 20–30 minutes to develop its thick consistency.
  • Adjust the Berbere carefully. Generic Berbere blends can vary in heat, so check the particular blend you're using.
  • Taste before adding salt. Season with Saffronice Natural Sea Salt only if needed.
  • Add the eggs near the end. The hard-boiled eggs only need to cook briefly in the finished sauce.
