  • 1 kg (2.2 lb) skinless chicken thighs
  • 10–15 Saffronice Saffron Threads
  • 2 tablespoons (30 ml) warm water, for blooming the saffron
  • Sea salt, to taste
  • Ground white pepper, to taste

For the Tagine

  • 2 preserved lemons (about 100–120 g), quartered
  • 100 g (about ⅔ cup) green olives, pitted
  • 2 large onions (about 300 g), finely chopped
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (about 2 g) ground coriander
  • 1 teaspoon (about 3 g) ground turmeric

Let's Start Cooking

Cooking the Moroccan Chicken Tagine

Step 1 – Bloom the Saffron & Marinate the Chicken

Place 10–15 Saffronice Saffron Threads in 2 tablespoons (30 ml) warm water and leave them to bloom for at least 15 minutes.

Season the chicken thighs with sea salt and white pepper, then add the saffron infusion, including the threads. Toss until the chicken is evenly coated and set aside while you prepare the remaining ingredients.

Step 2 – Brown the Chicken & Sauté the Onions

Heat the olive oil in a tagine or heavy-bottomed pan over medium heat.

Add the chicken thighs and cook until golden on all sides, then transfer them to a plate.

Add the finely chopped onions and cook until softened and golden.

Step 3 – Add the Spices, Lemon & Olives

Stir the ground coriander and turmeric into the onions and cook briefly before returning the chicken to the pan.

Return the chicken to the pan, then add the preserved lemons and green olives.

Step 4 – Simmer & Serve

Serving the Moroccan Chicken Tagine

Cover the pan and reduce the heat to low.

Simmer gently for approximately 1 hour, or until the chicken is thoroughly cooked and tender and the sauce has reduced and thickened.

Serve warm with fluffy couscous or crusty bread.

What Do Preserved Lemons Add?

Preserved lemons are one of the defining ingredients in this chicken tagine.

The preserved lemons are quartered and slowly cooked with the chicken, onions, saffron, spices and green olives.

The recipe calls for 2 preserved lemons, quartered.

Do You Need a Tagine Pot?

No. You can prepare the chicken in either a traditional tagine or a heavy-bottomed pan with a lid.

Once the chicken, preserved lemons and olives are added, cover and simmer gently over low heat for approximately 1 hour.

Expert Tips

A few simple techniques can help you get tender chicken and a flavourful tagine sauce.

  • Bloom the saffron first. Give the threads at least 15 minutes in warm water before using them.
  • Use the entire saffron infusion. Add both the liquid and threads to the chicken.
  • Brown the chicken first. Cook the thighs until golden on all sides before transferring them to a plate.
  • Cook the onions until golden. Add them after browning the chicken and cook until softened and golden.
  • Cook the spices briefly. Stir the coriander and turmeric into the onions before returning the chicken.
  • Simmer over low heat. Cover the pan and cook gently for approximately 1 hour.
  • Give the sauce time to reduce. The dish is ready when the chicken is tender, and the sauce has thickened.

What to Serve with Moroccan Chicken Tagine

Serve the Moroccan Chicken Tagine with fluffy couscous or warm crusty bread.

Spoon plenty of the sauce over the chicken and serve the preserved lemons, green olives and onions alongside.

Optional Vegetables

Carrots, courgettes (zucchini) or sweet potatoes can be added for a more vegetable-filled tagine.

Keep them as optional additions so the main combination of chicken, preserved lemon, green olives, saffron and spices remains at the centre of the dish.

Storage & Reheating

Allow leftover chicken tagine to cool before transferring it to an airtight container and refrigerating promptly.

When ready to serve, reheat thoroughly until the chicken and sauce are hot throughout. If the sauce has thickened, add a small amount of water while reheating.
