Roasted Vegetable and Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth (for cooking quinoa)
  • 2 cups mixed vegetables (e.g., zucchini, bell peppers, cherry tomatoes, red onion)
  • 2 tablespoons olive oil
  • 2-3 tablespoons Saffronice Dukkah Mix
  • Salt and pepper, to taste
  • Fresh lemon juice (from 1 lemon)
  • Fresh herbs (like parsley or mint), chopped, for garnish

Instructions:

  1. Cook Quinoa: Rinse quinoa under cold water. In a pot, bring the vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until all the broth is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

  2. Roast Vegetables: Preheat the oven to 400°F (200°C). Cut the vegetables into bite-sized pieces and toss them with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 20-25 minutes, until they are tender and slightly caramelized.

  3. Dressing: In a small bowl, mix the remaining olive oil with fresh lemon juice, and add 1 tablespoon of the Saffronice Dukkah Mix. Whisk together to create a dressing.

  4. Assemble Salad: In a large bowl, combine the cooked quinoa and roasted vegetables. Drizzle the dressing over the salad and toss gently to combine.
