Saffron-Infused Rosemary Lamb Rack: A Culinary Delight

Ingredients:
- 2 tbsp Saffron-Infused Rosemary Lamb Rub
- 2 racks of lamb (about 8 ribs per rack), French-trimmed
- Your choice of cooking oil
- Salt and pepper, to taste
- Fresh rosemary sprigs
- 4 cloves of garlic, smashed
Method:
- Preheat your oven to 200°C.
- Apply a thin, even layer of the Saffron-Infused Rosemary Lamb Rub over the racks. Feel free to add more for enhanced flavour.
- In a hot pan with a dash of oil, sear the lamb racks until all sides are evenly browned.
- Arrange the lamb on a baking tray, preferably elevated on a rack.

- Bake for approximately 20 minutes for a medium-rare finish, or 30 minutes for medium.
