For Cooking

Let's Start Cooking

cooking the steak

Step 1 – Make the Marinade

Add the soy sauce, white pepper, generic Middle Eastern spice mix, Saffronice Saffron Powder, olive oil, garlic powder, lemon juice, dried basil, dried parsley and Worcestershire sauce to a blender.

Add sea salt only if needed, then blend until well combined.

Step 2 – Prepare & Marinate the Steak

Trim any unwanted excess fat or rough edges from the steak and pat it thoroughly dry.

Place the steak in the marinade and coat well. Cover and refrigerate for at least 30 minutes or overnight.

Step 3 – Sear the Steak

Heat 1 tablespoon (15 ml) olive oil in a heavy-bottomed skillet over high heat.

Once the pan is very hot, add the steaks with space between them.

For medium-rare, cook the first side for approximately 5 minutes, flip and cook for another 4 minutes, adjusting as needed for the thickness of your steak.

Step 4 – Check the Temperature & Rest

For medium-rare, check that the thickest part of the steak reaches approximately 55–57°C (130–135°F).

Transfer to a plate, loosely cover with foil and rest for 10 minutes before slicing.

Step 5 – Slice & Serve

After resting, slice the steak diagonally into pieces.

Arrange on a serving plate and serve warm with your preferred sides.

Choosing Steak for This Recipe

You can use your preferred steak cut for this marinade.

Tender cuts such as strip loin, rib eye, tenderloin, porterhouse or T-bone are mentioned as suitable steak options, although the marinade can also be used with other cuts.

Whatever cut you choose, try to use steaks of a similar thickness so they cook at approximately the same rate.

Expert Tips

A few simple techniques can help you get a juicy steak with plenty of flavour.

  • Pat the steak dry. Removing excess surface moisture helps with browning.
  • Marinate for at least 30 minutes. For more preparation flexibility, leave it covered in the refrigerator overnight.
  • Use a very hot pan. The skillet should be properly heated before adding the steak.
  • Leave space between the steaks. Avoid overcrowding the pan.
  • Use a meat thermometer. This is more reliable than cooking time alone for determining doneness.
  • Adjust for thickness. Thicker or thinner steaks may require different cooking times.
  • Rest before slicing. Give the steak about 10 minutes before cutting into it.

Steak Doneness Guide

For medium-rare, the recipe gives an internal temperature of approximately 55–57°C (130–135°F).

For medium, it recommends approximately 60–65°C (140–150°F) and suggests lowering the heat to medium and cooking for about 6 minutes on the first side and 5 minutes after flipping.

What to Serve with Saffron-Marinated Steak

The rich, aromatic marinade pairs well with simple sides that allow the steak to remain the focus.

Serve it with saffron rice for an easy accompaniment.

For something lighter, add a fresh green salad, cucumber and tomato salad or grilled vegetables.

Roasted potatoes also work well if you'd like a more substantial meal.

Storage & Reheating

Allow leftover cooked steak to cool before transferring it to an airtight container and refrigerating promptly.

Reheat gently to avoid overcooking the beef, or slice the leftover steak and use it cold in salads or wraps.

If preparing the marinade ahead, keep it refrigerated until you're ready to use it.
