Saffron Paella Cooking Instructions:

  • In a small bowl, dissolve the saffron threads in 1/4 cup of Luke warm water and set aside.
  • Heat the olive oil in a large paella pan or skillet over medium heat. Add the onions and garlic, and sauté until they become translucent.
  • Add the diced bell peppers and cook for another 3-4 minutes until they start to soften.
  • Stir in the rice, paprika, turmeric, smoked paprika (if using), thyme, oregano, and cayenne pepper (if using). Coat the rice and vegetables evenly with the spices and cook for 1-2 minutes.
  • Pour in the saffron mixture, followed by the diced tomatoes and frozen peas. Stir well to combine.
  • Slowly add the broth, one cup at a time, stirring occasionally. Allow the rice to absorb the liquid before adding more.
  • Reduce the heat to low and simmer the paella uncovered for about 20-25 minutes, or until the rice is cooked and the liquid has been absorbed. Make sure to avoid stirring the rice too much to develop a crispy bottom layer.
  • Season with salt and pepper to taste. Garnish with fresh parsley.

Serve the saffron-infused paella hot, accompanied by lemon wedges for squeezing over the rice.

Enjoy this flavorful and aromatic saffron-infused paella with family and friends!
