  • 2½ cups (about 475 g) basmati rice, thoroughly rinsed
  • 5 medium carrots (about 500 g), julienned into matchsticks
  • 2 medium onions (about 300 g), thinly sliced
  • ½ cup (120 ml) olive oil, avocado oil or melted butter
  • 2 teaspoons (about 10 g) salt
  • 1 teaspoon (about 2 g) ground cumin
  • ½ teaspoon (about 0.5 g) Saffronice Saffron Threads
  • 1 whole garlic bulb, top cut off
  • Freshly ground black pepper, to taste
  • 5 cups (1.2 litres) water

Step 1 – Prepare the Rice & Bloom the Saffron

Rinse the 2½ cups basmati rice thoroughly under cold water until the water runs relatively clear. Drain well and set aside.

Infuse the Saffronice Saffron Threads in warm water and set aside.

Step 2 – Brown the Beef

Heat the oil or butter in a large Dutch oven over medium-high heat.

Add the beef sirloin and brown it on all sides.

Cover with a tight-fitting lid and cook gently for approximately 20 minutes, or until the rice is tender and has absorbed the cooking liquid.

Step 6 – Rest & Serve
