For the Vegetarian Saffron Rice

  • 1 zucchini, diced into small pieces
  • 1 orange or red capsicum (bell pepper), diced
  • 1 carrot, diced
  • 2 garlic cloves, peeled
  • 1 white onion, quartered
  • 1½ cups (about 300 g) basmati rice
  • 2 cans chopped tomatoes
  • 3 teaspoons (about 6–9 g) generic harissa spice mix
  • ¼ teaspoon (about 0.5 g) Saffronice Saffron Powder
  • 2 tablespoons (about 30 g) tomato paste
  • 1 vegetable stock cube, suitable for vegans
  • ½ bunch fresh coriander (cilantro), roughly chopped
  • ½ bunch Italian or flat-leaf parsley, roughly chopped
  • 2 tablespoons (30 ml) olive oil, or your preferred vegan cooking oil
  • 100 ml (about ⅓ cup + 1 tablespoon) water
  • Sea salt and freshly ground black pepper, to taste

Let's Start Cooking

Step 1 – Prepare the Vegetables, Herbs & Rice

Preparing fresh vegetables for cooking.

Dice the zucchini, capsicum and carrot into small, evenly sized pieces. Quarter the onion and peel the garlic cloves.

Roughly chop the fresh coriander and parsley and set aside.

Rinse the 1½ cups basmati rice thoroughly under cold running water, then drain well.

Step 2 – Prepare the Saffron Tomato Mixture

Add the chopped tomatoes, generic harissa spice mix, Saffronice Saffron Powder, garlic cloves, tomato paste and vegetable stock cube to a blender.

Blend until smooth and evenly combined.

Step 3 – Sauté the Onion & Vegetables

Heat 2 tablespoons olive oil in a heavy-bottomed pan over medium heat.

Add the onion and sauté until softened and translucent. Add the zucchini, capsicum and carrot and cook, stirring regularly, until they begin to soften.

Step 4 – Add the Tomato Mixture & Rice

Pour the blended saffron tomato mixture over the vegetables and stir well.

Add the rinsed and drained basmati rice, gently stirring until the rice is evenly distributed and coated.

Step 5 – Add the Water & Cook

Pour in 100 ml water, stir gently and reduce the heat to low.

Cover with a tight-fitting lid and cook for approximately 20 minutes, or until the liquid has been absorbed and the rice is tender. Avoid repeatedly lifting the lid while it cooks.

Step 6 – Rest & Fluff the Rice

Turn off the heat and leave the pan covered for a few minutes.

Remove the lid and gently fluff the rice with a fork.

Step 7 – Add the Herbs & Serve

Fold through the fresh coriander and parsley.

Taste and season with sea salt and freshly ground black pepper as needed, then serve warm.
