For the Barramundi:

For the Simple Prawn Broth:

  • Shells and heads from 8 prawns
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of water
  • Salt and pepper, to taste
  • A pinch of Saffronice premium Saffron (optional)


  1. Prepare the Prawn Broth:

    • In a saucepan, heat olive oil over medium heat.
    • Add prawn shells and heads, onion, and garlic. Sauté until the shells turn pink.
    • Add water and bring to a simmer. Include saffron if desired.
    • Simmer for 20-30 minutes, strain, and season with salt and pepper.
  2. Cook the Barramundi:

    • Season the barramundi fillets with Baharat Moroccan Spice Blend, salt, and pepper.
    • In a pan, heat olive oil and fry the barramundi until the skin is crisp, then flip, add butter, and cook until done.
  3. Serve:

    • Plate the barramundi and serve with the warm, strained prawn broth or on a bed of salad or baked veggies of your choice.
