- 1 cup All-Purpose Flour
- ¾ tsp Baking Powder
- 3 Eggs, room temperature
- ½ tsp Saffron Powder
- 1 tsp Vanilla Aged Extract
- ¾ cup Sugar

- ¼ cup Cream
- ½ cup Condensed Milk
- 1 ½ cups Milk
- 1 pinch Saffron

- ¼ cup Saffron Honey (Saffronice Raw Sunshine Coast Saffron Honey)
- ¼ cup Water

For Icing:
- ¾ cup Icing Sugar or Raw Honey
- 1 ½ cups Chilled Cream or Unsweetened Whipping Cream

- Chopped Pistachios
- Dried Rose Petals
- Pinch of Saffron Threads
Preparation:

Saffron Sponge Cake:
- Preheat oven to 170°C (338°F).
- Grease and flour an 8-inch baking dish.
- Mix flour, saffron powder, and baking powder. Set aside.
- Beat butter and sugar until creamy. Add eggs one at a time, then vanilla.
- Fold in dry ingredients.
- Pour into dish, tap to release air bubbles.
- Bake for 25 minutes or until done.
