Bomba rice

For the Saffron Rice Base

  • 2 cups (about 380 g) Bomba rice
  • 1 generous pinch (about 0.1 g) Saffronice Saffron Threads
  • 2 tablespoons (30 ml) warm water, for blooming the saffron
  • 5 cups (1.2 L) seafood stock
  • 4 tablespoons (60 ml) olive oil
  • 1 medium onion (about 150 g), finely chopped
  • 3 garlic cloves (about 9 g), minced
  • 1 red capsicum/bell pepper (about 150 g), diced
  • ½ cup (about 120 g) tomato purée
  • 1 teaspoon (about 2 g) smoked paprika
  • Sea salt and freshly ground black pepper, to taste

For the Seafood

  • 200 g (7 oz) shrimp/prawns, peeled and deveined
  • 200 g (7 oz) mussels, cleaned
  • 150 g (5.3 oz) squid rings

For Serving

  • 1 lemon (about 120 g), cut into wedges

Let's Start Cooking

Step 1 – Bloom the Saffron & Prepare the Base

Place the Saffronice Saffron Threads in 2 tablespoons (30 ml) warm water and leave them to bloom for approximately 10 minutes.

Meanwhile, heat the olive oil in a wide paella pan or large shallow skillet over medium heat. Add the onion and garlic and sauté until softened, then stir in the red capsicum and tomato purée. Cook until the mixture thickens slightly.

Step 2 – Add the Rice & Saffron Stock

Add the Bomba rice and stir briefly to coat the grains in the tomato mixture.

Pour in the seafood stock and the entire saffron infusion, including the threads. Add the smoked paprika and season with sea salt and freshly ground black pepper.

Spread the rice evenly across the pan, reduce the heat to medium-low and simmer for approximately 15 minutes without stirring.

Step 3 – Add the Seafood

Arrange the shrimp and squid over the rice and continue cooking.

After approximately 5 minutes, add the cleaned mussels, placing them hinge-side down into the rice.

Step 4 – Develop the Socarrat & Rest

Once the rice is tender and most of the liquid has been absorbed, increase the heat slightly for a few minutes to help develop the toasted socarrat on the bottom.

Remove the pan from the heat, cover loosely with foil and leave the paella to rest for 5–10 minutes.

Step 5 – Serve
