Fijian Saffron Vegetable Delight: Tropical Flavors in One Pot

Fijian Saffron Vegetable

  • 2 tablespoons Fiji Spice blend with Saffron
  • 1 small brown onion, finely diced
  • ½ cup cauliflower and Zucchini cubed
  • ½ cup carrots, chopped
  • ½ cup capsicum, chopped
  • ½ cup green beans, chopped
  • Your choice of cooking oil
  • Salt and pepper, to taste


  1. Heat oil in a medium pan and sauté the onion until golden.
  2. Stir in garlic and continue to sauté gently.
  3. Blend in two tablespoons of the Fiji Spice Blend with Saffron, adding a splash of warm water to form a smooth paste.
  4. Toss in the vegetables and add just enough water to cover them. Stir well to combine.
  5. Simmer on low heat until the veggies are tender and the flavors meld.
