Lamb Kebab with Saffron & Vegetables

  • Lamb fillet or shoulder: 500 grams, cubed
  • Rissole, Kebab, and Mince Seasoning + Saffron: 2 tablespoons
  • Zucchini: Sliced into 2 cm pieces
  • Red Capsicums: 2, deseeded, bite-sized pieces
  • Onion: 1, bite-sized pieces
  • Cooking Oil: As needed
  • Salt and Pepper: To taste
  • Wooden or Metal Skewers


    • Marinate Meat: In a bowl, mix the Rissole, Kebab, and Mince Seasoning + Saffron with enough olive oil to create a paste. Coat the lamb cubes thoroughly in this mixture. Set aside to marinate and absorb the flavors.
    • This adjustment will not only help in infusing the lamb with the rich flavors of the seasoning and saffron but also aid in achieving a juicier, more succulent texture when grilled.
    • Skewer Assembly: Thread lamb and vegetables alternately onto skewers, leaving a handle.

    Cooking Instructions:

    1. Preheat Grill: Heat barbecue or grill pan to medium-high.
    2. Grill Kebabs: Cook skewers, turning every 2 minutes until golden.

    Saffron Rice (Flavorful Side):



    1. Infuse Saffron: Soak saffron strands in a tablespoon of warm water for about 10 minutes to release their flavor and color.
    2. Cook the Rice: Rinse the basmati rice under cold water until the water runs clear. In a saucepan, heat the olive oil over medium heat. Add the rice and sauté for a minute. Pour in water, infused saffron, and salt. Bring to a boil.
    3. Simmer: Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and the water is absorbed.
    4. Fluff and Serve: Fluff the rice with a fork before serving.
