This dish is a celebration of life, just like the stories shared over a cup of tea on a warm South Indian afternoon. It's not just a meal; it's a gathering of flavors and family.

Serving Size: Enough to fill the hearts and plates of 6 beloved family members.

Ingredients:

  • 2lbs of boneless chicken, cut with care
  • 2 tablespoons of our special saffron-infused curry powder (hot), as vibrant as our heritage
  • ½ cup of cooking oil, for a touch of tenderness
  • 1½ cups of finely chopped onions, each piece carrying a tale
  • 1 tablespoon of lovingly minced garlic
  • 1½ teaspoons of freshly grated ginger root, for a hint of tradition
  • 1 teaspoon of cayenne pepper, like the spice of life
  • 1 can (15 ounces) of canned tomatoes, as rich as our stories
  • 1 cup of yoghurt, to cool the heart
  • 1 tablespoon of freshly chopped cilantro, like a garden in bloom
  • 1 teaspoon of sea salt, as precious as memories
  • 3/4 cup of water, the essence of life
  • 1 teaspoon of garam masala, a blend of life's spices
  • 1 tablespoon of lemon juice, for a drop of sunshine

Preparation:

  1. Begin by chopping onions with patience, mincing garlic and ginger with love, all in a pestle and mortar.
  2. Chop fresh cilantro and squeeze lemon juice as if you're extracting the essence of life itself.
  3. Season chicken pieces with sea salt, just like sprinkling wisdom.

Cooking Instructions:

  1. In a large skillet, heat oil over a medium flame. Add the seasoned chicken and cook until golden brown, just like the sun setting over a South Indian village.
  2. Set the chicken aside, and in the same skillet, add onions, ginger, and garlic. Fry them until the onion becomes translucent, a dance of flavors and aromas.
  3. Stir in the saffron-infused curry powder with a tablespoon of water, letting the spices mingle.
  4. Add yoghurt, canned tomatoes, salt, and garam masala. Stir with affection.
  5. Gently add the chicken back into the curry, pouring in water to bring the family of flavors together.
  6. Let it simmer on low heat for 20 minutes, covered with a lid, like a story unfolding slowly.
  7. Finally, garnish with cilantro, and sprinkle some lemon juice, just like a grandmother's blessing.
