Saffron Paella Ingredients:
2 cups of Arborio rice
4 cups of vegetable broth
1 onion, finely chopped
3 cloves of garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup of frozen peas
1 cup of diced tomatoes
1 teaspoon of saffron threads
1 teaspoon of paprika
1 teaspoon of turmeric
1/2 teaspoon of smoked paprika (optional, for added flavor)
1/2 teaspoon of dried thyme
1/2 teaspoon of dried oregano

Saffron Paella Cooking Instructions:
- In a small bowl, dissolve the saffron threads in 1/4 cup of Luke warm water and set aside.
- Heat the olive oil in a large paella pan or skillet over medium heat. Add the onions and garlic, and sauté until they become translucent.
- Add the diced bell peppers and cook for another 3-4 minutes until they start to soften.
- Stir in the rice, paprika, turmeric, smoked paprika (if using), thyme, oregano, and cayenne pepper (if using). Coat the rice and vegetables evenly with the spices and cook for 1-2 minutes.
- Pour in the saffron mixture, followed by the diced tomatoes and frozen peas. Stir well to combine.
- Slowly add the broth, one cup at a time, stirring occasionally. Allow the rice to absorb the liquid before adding more.
- Reduce the heat to low and simmer the paella uncovered for about 20-25 minutes, or until the rice is cooked and the liquid has been absorbed. Make sure to avoid stirring the rice too much to develop a crispy bottom layer.
- Season with salt and pepper to taste. Garnish with fresh parsley.
